Yield: 4 to 5 servings
1¼ cups old-fashioned oats
½ cup unbleached all-purpose flour
½ cup plain cornmeal
3 tablespoons light brown sugar
4 teaspoons baking powder
¾ teaspoon salt
2 large eggs, lightly beaten
1 cup heavy whipping cream
1 cup whole milk
6 tablespoons melted butter
Garnish: maple syrup, butter, and fresh fruit
1. Preheat waffle iron to Medium.
2. In a large bowl, combine oats, flour, cornmeal, brown sugar, baking powder, and salt. Stir in eggs, cream, milk, and melted butter. Let batter stand for 10 minutes.
3. Pour approximately ¼ cup batter onto hot waffle iron, and cook until waffle ceases to steam, approximately 4 minutes. Repeat with remaining batter. Keep an eye on waffle iron; these waffles crisp up quickly.
4. Serve with maple syrup, butter, and fresh fruit, if desired.
