Yield: approximately 32 cups
7 cups pecan halves
7 cups blanched whole almonds
6 cups cashews
6 cups macadamia nuts
6 cups walnuts
½ cup extra-virgin olive oil, divided
½ cup butter, melted and divided
1 recipe Seasonal Spice Mix 1. Preheat oven to 350°. Line rimmed baking sheets with parchment paper. Set aside.
2. In a large container, combine pecan halves, almonds, cashews, macadamia nuts, and walnuts.
3. For each batch of nuts, combine 4 cups mixed nuts, 1 tablespoon olive oil, and 1 tablespoon butter, tossing to coat. Sprinkle nuts with approximately 1/4 cup Seasonal Spice Mix, stirring to combine. Spread nuts on prepared baking sheet.
4. Bake each batch for 15 to 20 minutes. Remove from oven, and let cool completely. Repeat with remaining nuts, oil, butter, and spice mix.
5. Store in an airtight container for up to 1 week.
