Yield: approximately 2 cups

1 cup plus 2 tablespoons firmly packed dark brown sugar
½ cup chopped fresh rosemary
1 tablespoon plus 1 teaspoon kosher salt
1 tablespoon ground black pepper
1 tablespoon smoked paprika
1 tablespoon ground chipotle pepper
½ teaspoon ground red pepper
 
1. In a medium bowl, combine brown sugar, rosemary, salt, pepper, paprika, chipotle pepper, and red pepper, whisking to combine. Set aside.
