Yield: 10–12 servings

3 pounds fresh green beans, trimmed
6 slices bacon
2 large sweet onions, chopped
2 tablespoons sugar
2 tablespoons balsamic vinegar
1 teaspoon ground black pepper
1. In a large saucepan, cook beans in boiling water until tender, 10 to 12 minutes. Drain and set aside. (Beans may be refrigerated overnight, if desired.)

2. In a large skillet, cook bacon until crisp. Remove bacon, let cool, and then crumble.

3. Add onion and sugar to skillet. Cook until soft, 15 to 20 minutes. (Cool and refrigerate overnight, if desired.)

4. Add beans and vinegar. Cook until heated through, approximately 5 minutes. Sprinkle with bacon before serving.
