Yield: 4 servings

 

teaspoons butter

cups strawberries, hulled and cut in half

cup firmly packed light brown sugar

¼ cup tapioca flour, sifted

teaspoon cornstarch

tablespoons maple syrup

teaspoons vanilla extract

Oatmeal Crumble   


1. Preheat oven to 350°. Place 1 teaspoon butter in each of 4 cast-iron oval mini servers. Place servers in oven to melt butter. 

 

2. In a large bowl, combine strawberries, brown sugar, flour, cornstarch, syrup, and vanilla. 

  

3. Divide mixture among prepared servers. Top with Oatmeal Crumble.

               

4. Bake until bubbly, 25 to 30 minutes. Let cool for 5 minutes. Serve immediately.
