Citrus and Shaved Fennel Salad

Our Citrus and Shaved Fennel salad is not only a refreshing side, but brings bright, seasonal color to your holiday table.

Make-Ahead Tip: You can make the dressing for this salad 2 to 3 days ahead of time, but wait to stir in the fresh herbs just before serving. 
Citrus and Shaved Fennel Salad
Yield: approximately 8 servings

Ingredients
  1. 6 oranges, peeled and sliced crosswise
  2. 2 grapefruit, peeled and sliced crosswise
  3. 1⁄2 bulb fennel, cored, thinly sliced, and fronds reserved
  4. 3 tablespoons pomegranate seeds
  5. Sherry-Herb Vinaigrette (recipe follows)
  6. Garnish: fennel fronds, fresh parsley leaves
Instructions
  1. On a serving platter, layer orange, grapefruit, and fennel. Sprinkle evenly with pomegranate seeds.
  2. Drizzle with Sherry-Herb Vinaigrette just before serving. Garnish with fennel fronds and parsley, if desired.

Sherry-Herb Vinaigrette
Yield: approximately 1/2 cup

  1. 1⁄4 cup plus 2 tablespoons sherry vinegar
  2. 1⁄4 cup extra-virgin olive oil
  3. 1 tablespoon honey
  4. 1 teaspoon kosher salt
  5. 1⁄4 teaspoon ground black pepper
  6. 2 tablespoons torn fresh basil leaves
  7. 2 tablespoons chopped fresh parsley
Instructions
  1. In a small bowl, whisk together vinegar, olive oil, honey, salt, pepper, basil, and parsley.
