Pick your favorite preserves to spread between these savory cheese coins. We also love them with cherry and peach preserves.
Blue Cheese Coins with Raspberry Filling

Yield: approximately 2½ dozen sandwich cookies
Ingredients
- 2 cups all-purpose flour
- 2 cups crumbled blue cheese
- ¾ cup cold unsalted butter, cubed
- 1 teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ¼ cup whole milk
- Seedless raspberry preserves
Instructions
- Preheat oven to 350°. Line 2 baking sheets with parchment paper. Set aside.
- In the work bowl of a food processor, add flour, cheese, butter, salt, and pepper; pulse to combine. With food processor running, add milk in a slow steady stream until mixture forms a dough.
- Divide dough in half, and roll into a log. Wrap in parchment; freeze until firm, approximately 2 hours. Slice into ⅛-inch-thick rounds, and place 1 inch apart on prepared pans.
- Bake until golden brown around edges, 18 to 20 minutes. Let cool completely on wire racks. Store in an airtight container up to 5 days. To serve, spoon approximately 1 teaspoon preserves on flat side of one coin; top with another coin, flat side down. Repeat with remaining coins and preserves.

I’m certain these will taste great, but I feel like preheating the oven approximately two hours in advance of baking is maybe a bit overzealous.
