Blackberry Cobbler
Yield: approximately 12 servings

Ingredients
  1. 1⁄2 cup unsalted butter, melted
  2. 4 cups blackberries, fresh or frozen
  3. 3 cups sugar, divided
  4. 1⁄4 cup water
  5. 1 tablespoon fresh lemon juice
  6. 2 cups self-rising flour
  7. 2 cups milk
  8. 1⁄2 teaspoon salt
  9. 1⁄4 teaspoon ground cinnamon
  10. Ice cream (optional)
Instructions
  1. Preheat oven to 350°. In a 13x9-inch baking dish, place melted butter. Set aside.
  2. In a medium saucepan, combine blackberries, 1 cup sugar, 1⁄4 cup water, and lemon juice.
  3. Cook over high heat, stirring occasionally, until mixture comes to a boil, approximately 4 minutes. Set aside.
  4. In a large bowl, whisk together remaining 2 cups sugar, flour, milk, and salt until smooth. Pour batter into prepared dish. Pour berry mixture over batter. (Do not stir.) Sprinkle evenly with cinnamon.
  5. Bake until bubbly and top begins to brown, approximately 40 minutes. Let cool 15 minutes before serving with ice cream, if desired.
