Bacon, Fig, and Arugula Sandwiches

Ingredients
- 1 sourdough baguette
- 4 tablespoons fig preserves 16 slices cooked bacon
- 1 (5-ounce) container crumbled goat cheese
- 2 cups arugula
- 2 tablespoons whole-grain mustard
Instructions
- Cut baguette into 4 equal pieces. Halve baguette pieces horizontally. Spread each bottom half with 1 tablespoon fig preserves. Top each with 4 slices bacon, 2 tablespoons goat cheese, and 1⁄2 cup arugula. Spread 11⁄2 teaspoons mustard on remaining baguette halves; place on top of arugula. Refrigerate until ready to serve.
